What's for Dinner?

Sorry it has been awhile since I last posted.  We had spring vacation sandwiched in there, and boy was it great!  The Darling Husband and I went to Park City, Utah, to go skiing.  Park City is amazing!  So much blue sky and sunshine, tons of snow, and so much good food! Yum!  I will devote a post to some of the amazing things I ate while I was there once I try to copy them and make them myself.  BTW - does anyone know where I can get some black truffles packed in oil?

Yesterday I was reading Pioneer Woman and found two new recipes I wanted to try.  I made the first one for dinner tonight, and I highly recommend it - especially to my veggie loving and vegetarian friends. So good!

I used two zucchini instead of the summer squash and I only used 16 ounces of chopped mushrooms.  It made a ton of veggies - in fact, I had some extra sauteed veggies in the white wine and tomatoes and I saved them for lunch tomorrow.  It tasted kind of like ratatoui - yum!  I used grated mozzarella cheese instead of cheese slices. I also ended with a layer of mozzarella cheese and parmesan on top.  I like my lasagna with cheese on top.
